
Marys Favourite high protein low carb breakfast at the moment: Egg white omelette with cooked chicken and asparagus spears.
I don’t like things to be complicated so this simple breakfast is one of my favourites. I buy a 1 litre bag of frozen egg whites from Coles (near the pastry i Dunsborough store) Edgell tin of asparagus spears ( because there is no added sugar) and a cooked chook. Only eat the breast and no skin.
You could certainly do this with fresh ingredients but I like quick (I have 6 children remember and a business to run)
Spray an omelette pan lightly with oil and add ½ to ¾ cup egg white , chop 50-100gms of cooked chicken breast, add to half of the omelette when egg is cooked, cover the chicken with 4-6 drained asparagus spears and fold the omelette in half. Leave to warm the chicken and asparagus .
Then eat. Size doesn’t matter , just make sure you are full so you can wait 3 hours before your next healthy meal.
